Sambar rice

Recipe from my aunt

Ingredients:

  • oil – 1 tbsp
  • Cumin – 1 tsp
  • mustard – 1 tsp
  • Methi seeds – 1 tsp
  • curry leaves – 3-4
  • Hing – 1/2 tsp
  • green chillies – 2-3 (as per taste level)
  • Onion – 1 (big)
  • Tomato – 1
  • Toor Dal – 1/3 cup
  • Rice – 1 cup
  • Any vegetables of choice
  • Salt – 1 tbsp (as per taste)
  • Water – 6 cups
  • Tumeric – 1 tsp
  • Sambar powder – 2 tbsp
  • Pressure cooker

Preparation:

  1. Take a pressure cooker, add oil.
  2. When the oil is hot, add cumin, mustard, methi seeds, curry leaves, hing and green chilles and fry for 30 secs
  3. Add onions and fry till golden brown
  4. Add tomato and cook till done
  5. Add the vegetables (like green beans, carrot, etc) and fry till for 10 mins on medium flame.
  6. When done, add dal and rice
  7. Add salt, tumeric and 1 tbsp sambar powder and mix everything well.
  8. Add water and close the lid and wait till 5-6 whistles.
  9. When done, open the cooker
  10. Add 1 tbsp sambar and cook for sometime or close for 1 more whistle
  11. Serve hot with papad
  • DO NOT USE okra (Lady’s finger), brinjal (eggplant) in vegetables
