Sambar fried rice

Recipe from my aunt

Ingredients:

  • 1 cup cooked and cooled rice
  • 1 onion
  • 2-3 green chillies (can increase or decrease depending on taste)
  • 1 tbsp ginger-garlic paste
  • 3-4 curry leaves
  • 1 big tomato / 2 small tomatoes
  • 1 green bell pepper
  • oil – 2 tbsp
  • salt – 1 tbsp (as per taste)
  • tumeric – 1/4 tsp
  • chilli powder – 1 tsp
  • sambar powder – 1-2 tbsp
  • water – 1/2 cup
  • lemon – 1/2

Preparation:

  1. Cook the rice normally and let it cool down
  2. Now take a utensil, add oil.
  3. When the oil is hot, add green chillies, curry leaves and fry for 30 secs
  4. Add onions and fry till golden brown
  5. Add ginger-garlic paste and fry for 1 minute
  6. Add tomato and bell pepper. Fry till they are cooked
  7. When done, add salt, tumeric, chilli powder and sambar powder
  8. Add water and let them all cook well
  9. Now put the cooked rice and mix everything well.
  10. Squeeze lemon and mix well
  11. Serve hot and best food while traveling
